Butternut Snap biscuits

Heat a camp oven over the coals. Put biscuits into the camp oven on a trivet for five minutes. Remove biscuits from the camp oven once soft and mould them into little cups. Allow to cool. Spoon caramel into the biscuit cups. Melt chocolate over the fire and spread on top of the caramel. Put in fridge to cool!
Campfire skillet ratatouille

Ingredients:
1 bell pepper, cut into thin strips
1 medium zucchini, cut into thin rounds
1 small eggplant, cut into thin rounds
1 medium tomato, cut into thin rounds
1 small red onion, cut into thin rounds
1/4 cup olive oil
1 tablespoon balsamic vinegar
3 cloves garlic, minced
1 teaspoon fresh thyme leaves
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled feta cheese
1 tablespoon chopped fresh basil
Method:
Arrange the slices of bell pepper, zucchini, eggplant, tomato, and onion in a large cast iron skillet.
In a small bowl, mix together the olive oil, balsamic vinegar, garlic, thyme, salt, and pepper. Drizzle this mixture over the vegetables in the skillet.
Place the skillet on your campfire or stove and cook for 20-30 minutes, until the vegetables are tender and slightly charred.
Sprinkle the feta cheese and fresh basil on top before serving.
